Isocrates begins his “Panegyric” as follows: “It is surprising that the organizers of the feasts and the games consider the abilities of the body so praiseworthy, while for those who engage in intellectual activities no honour whatsoever has been provided”. I believe that if Isocrates were alive today he would be expressing the very same query. It is our duty to recognise and pay tribute to the efforts of intellectuals and scientific researchers who have dedicated themselves to the struggle for the spiritual and cultural uplifting of our society.
With his six, scientifically structured books on the tourist product of our country, Soteris Kefalas has contributed to the enhancement of world literature on this subject and to the general strengthening on the economy of the island, which as is well-known is largely reliant on tourism.
Herodotus wrote that the physician Democedes was so good at what he did that his value was recognised even in his own country. We are proud of the fact that Soteris Kefalas happens to be a citizen of Paralimni and that he serves education with such love and dedication.

A book is a window through which to view the world, and for the young it is a definitive factor for the development of their lives. Despite technological developments, the value of books will never be surpassed, in the same way that the cinema has not replaced the theatre nor has photography taken the place of painting.
Books will remain always true and pleasant friends whose pages give us emotional pleasure or knowledge. This is true of the books of my friend and school fellow Soteris Kefalas which are the fruit of an inspired idea and a great deal of hard work.
I consider it an honour for us citizens of Paralimni that a fellow citizen, Soteris Kefalas, has published these excellent books on the tourism industry.
I am certain that these books will be used as teaching manuals for students of hotel management courses and will prove a useful aid to those involved in the hotel business, whether as owners, executives or researchers and will enrich the literature in the field of hotel management.
